Meal Planning... Where Do I Start?!

It's only the first month of the year, and we've already gone WAY over our food budget for the month. How did this happen, you ask? Eating out. There has been a lot going on just in this first month that I haven't really had the opportunity (or chance, or want lol) to cook. At all. I have to admit, part of my not wanting to cook came from the lack of appetite that comes with pregnancy. I wasn't in the mood for any kind of food unless I could have it right then and there. Hence the eating out.

I decided that it was time for a change, and my hubs agreed. Where do we start? What tools do I need? How many recipes? How far in advanced should I plan meals? The possibilities are endless!!

Ultimately, I turned to Pinterest. Where would the world be without Pinterest?!? Almost immediately I came across a website that was titled, "Meal Planning - How To". In my mind, I thought great! This will be such a great help!! It wasn't until I read further down that she wasn't just doing ordinary meal planning, but planning meals FOR A YEAR!!! (Click picture below for website.)

First thing that came to my mind - IS THAT EVEN POSSIBLE?!

I proceeded to read her lengthy article, and realized that it wouldn't be too hard to plan meals a year at a time. She gives really great detailed steps on how to get started and how to organize everything. She's obviously not a stranger to the whole organization/planning ordeal because even her tips and tricks are organized! Clever.

The first road block I came to was the recipes. I didn't have very many (if any) recipes of my own. I usually go through my mom's cookbook if there was a certain recipe I wanted to make. Naturally, I went straight to Pinterest. I went through all of my food boards, collected all of the recipes I have either wanted to make or have made, and made a google doc. (Recipe list here) Breakfast, lunch/dinner, desserts, oh my!

So far I have about 75 recipes, some of them I printed straight from the host website. Others I had my mom email to me (can't get enough of good home cookin'!). I downloaded and printed the free binder printables and started to assemble everything when I realized, I need A LOT of page protectors. So I'm at a stand still until I get more, but I think this whole thing will be fun! I'll keep updating on my progress!

Kick Boxing

The pro bowl was on tonight! AFC (American football league) versus NFC (National football league). Matthan and I were down in Sahuarita visiting his family and watching the game together. The end was drawing near, and the family had dispersed throughout the house. Soon enough, it was just Matthan and I watching the game. He looked over at me and said that he loved me (insert collective "AWW") when all of a sudden my stomach twitched.

Aww cute, I still get butterflies when he says cute things. But then it happened again! And again! Jeez, why is my stomach so twitchy?

Then I realized, THE BABY WAS KICKING!!! I immediately grabbed Matthan's hand and said, "Feel this!!" It took a few seconds, but he said he could feel it! We just sat there during commercials with his hand on my growing belly, just under my belly button, feeling our little soccer player or ballerina kicking away. It was such a great experience!! 

I REALLY felt the kicks coming when we were about 5 minutes from our apartment. We had to go through some heavy construction with a lot of pot holes and street damage. There was bump after bump after bump! About 30 seconds after the construction, the baby was kicking so much! I think it was just pay back for all of the bumps. 

Ever since the end of the football game, I've been able to feel little kicks here and there. My mother in law told me that there will be a time when the baby kicks so much you just want them to stop, but I'm going to bask in this for as long as I can. I think it's safe to say that it has been a GREAT night!

What's in a name?

Well it's about that time. What time you ask? Time to start a baby name list! Woohoo!! Now we're not 100% sure on the gender, so we've been coming up with both boys and girls names. Hopefully in a few weeks, we'll know for sure if Matthan gets his little princess or if I get my mama's boy! ;)

I've heard a lot that when picking out a name for your child, consider it if sounds good in an office at a professional job. I've never really thought about that before, but now that I have it makes sense. You don't want your child to have a high-class job and their name be out-of-this-world, like Aero or Casanova. (No offense to people with those names...)

We are pretty much set on a boys name. On my side of the family, there are four generation of John Andrew Szanto's. On his side of the family, Richard is the first name of many of the males, and they go by their middle name. With my brother being John Andrew Szanto IV, he is expected to name his son JAS the fifth. Whether he does it or not is up to him. One day I was playing around with names and came up with Richard (Bosse side) Andrew (Szanto side). Richard Andrew Bosse, Andy for short. We both love it! He'll grow up watching Toy Story and his room will most likely have the Toy Story theme.

I absolutely LOVE the name Sophie, but Matthan doesn't think it sounds "round" enough. Seriously? What makes a name "round"?! He doesn't know how to explain it, and I still have no idea what he's talking about. That's one of our biggest (if not the only) differences on names - whether they are round. He likes the name Sophia, just not Sophie. Go figure.

I'm just going to start naming girls names that we like. This is pretty much just my brainstorming, so just bear with me!

A time to be thankful.

A few weeks ago, Matthan and I sat down to have a family meeting and go over our budget. We realized that come June (when our lease is up) we wouldn't be in a great place financially and that we would need to get a new place. Matthan contemplated getting a second job, but going to school full time and working 2 part time jobs would be killer for him. I had applied to many places but didn't get anything. We were really worried and didn't know what to do. Both of us knew this day would come, but not so soon! What do we do now?

Just a few days after, we said our evening prayers after we got ready for bed. As soon as we were finished, Matthan got a call from a member in our bishopric. He heard through the grapevine that we were looking for a new place to live. He then continued to tell my hubby that he and his wife owned an apartment complex fairly close to the school and were looking for some assistant managers. Of course, the jobs would require us to live on-site. 


Matthan's face automatically lit up and I, not knowing what was going on, was curious as to who called, and what they told my husband. Matthan proceeded to tell Brother Mack that we were very interested and that they would get in touch to talk about details on another day. After Matthan got off the phone, he started jumping on the bed! I still had no idea what was going on so I just gave him a funny look.

FINALLY, he calmed down enough to tell me what was going on. Then, simultaneously, we both started jumping on the bed. We couldn't wait to find out all of the details!! It was so hard to sleep that night only to know that the next day we would possibly be signing our lives away to this company.

Long story short, we are now the assistant managers at an apartment complex and living on-site! It is such a great blessing!! Let me tell you, a 1 bedroom is MUCH bigger than a dinky little studio apartment. Now we have a little extra room for when the little munchkin comes in July.

Since this weekend is a 3 day weekend, we thought it would be a perfect time to move all of our stuff. On a plus side, this weekend is a BEAUTIFUL weekend! The high's are in the mid 70's all weekend and even throughout the week! In January! I'm still getting used to Arizona weather, but I think I can live with it. (I say that now, just wait until summer comes...)

Parents to be!

I know it has been a long while since my last post, but I have a really good excuse. We're pregnant! It is so exciting! I know that doesn't sound like a good excuse for not posting, but there's more. You know how the princess (Kate Middleton) has had extreme morning sickness and had to be hospitalized for it? Well, I had that too, only I wasn't hospitalized. It was really bad. I couldn't keep any kinds of food down no matter what I did. That was the first trimester, and now I'm well into the second trimester! 16 weeks today! Woohoo!

We had our first appointment today! We had a little problem with insurance, so that's why we didn't go to a doctor sooner. It was a little nerve racking at first, since I've never been to THAT kind of doctor, but it wasn't as bad as I thought. Granted, I only had an abdominal ultrasound and some blood drawn, but the "fun" stuff is to come in 2 weeks. Yay.

So we got to see our little munchkin moving around! It was such a great experience!! Between weeks 16 and 22 weeks, you can feel the baby "moving". It has been described as feeling butterflies in your stomach, I still haven't had the opportunity to feel it yet, but during the ultrasound I could see our little baby moving around! It looked like it was doing sit ups! It was super cute!

I apologize if the quality of the picture isn't the best, I took the picture with my camera. We have an idea of what the gender might be, but we're going to wait a few weeks to finalize it. We're trying to figure out a clever way to tell the public as well. I have an idea, but we're still going to wait. I have another appointment in 2 weeks and we'll post more baby updates then. We are so excited for this opportunity to be parents!
