Homemade, Easy, Cheap!

Everyone's been in this situation - it's the last few days before payday, and your food situation isn't the best. It's just about dinner time and I have NO IDEA what to make. There is always the option of Top Romen, but who really wants to eat that stuff? It's loaded with salt!

I'm panning through the cupboards and the fridge, and I just start grabbing things. After a few minutes I realize I can make a "mock fried rice" type of dish. So, here's what I did!

1 package of Ramen Noodles ONLY, cooked
2 eggs, scrambled
1/2 cup of frozen veggies
1 tablespoons of soy sauce, or however much you want. I added extra because I love soy sauce!

Cook Ramen noodles as directed on package, set aside. Scramble eggs, set aside. Prepare veggies as directed. Combine all ingredients and stir. Voila! Makes roughly 2 servings.

It came out better than I thought, and it's safe to say that this mama-to-be isn't hungry anymore.
